Bishop Wagyu have been producing Wagyu X Angus F1 and Full Blood Wagyu cattle for the Australian feed lot sector since 1998. In this time we have learnt a lot about Wagyu and Angus cattle, how they are produced and how to breed them to target specific markets. Our Angus X Wagyu cattle are constantly averaging over 440kg HSCW after 350 DOF with an average MBS of +6.4

How & Why We Breed Wagyu

Wagyu breeding requires combinations of bloodlines, accurate performance data and most importantly consumer preference. Wagyu cattle are an intelligent breed (not feisty), have a good calving ease, resilient in the feedlot and of course when raised correctly deliver an exquisite marbled beef quality. 

Breeding Principle

With over 100 years in beef production and 25 years specialising in Wagyu beef breeding and production the Bishop family have developed an objective breeding approach to produce Full Blood Wagyu cattle. We consider both Science based analysys including Genomic EBV's and production traits that include, Fertility, Milk production, Growth, carcase weight, carcase marbling and carcase yield.

How to Perfectly Cook Wagyu Steak

  • Season Wagyu steaks prior to cooking: the sizzle of sea salt and pepper combined with the marbling fat produces a "to die for" caramelised crust that should appear on every perfectly cooked Wagyu steak.
  • Pan sear or char grilling Wagyu steaks.
  • Marbling fat is the only oil that should be used: Adding butter or oil to the pan introduces flavours that can mask or conflict with the delicate taste of Wagyu steak.
  • Cook steak to medium - rare.
